Cane fruit - basic pruning techniques?

Hello -- I have some Marion blackberries that I put in 3 years ago, and they are in a very sad state, and have been trampled repeatedly. There are some long vines on the ground now, and a few new shoots that were put out over the summer (some off the older vines), a couple of which have rooted. What's the best way to deal to it for winter preparation (we get heavy frosts every morning nearly all winter long)? Is it ok to cut every vine back? If so, how far? I am going to put up proper supports and cover it with birdnetting in the spring so hopefully it will have a chance.
