What is the correct way to use butter pats?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Are you supposed to wet them before you use them to work your butter or do you use them dry?

Haven't seen it done for a long time, but don't you start dry and the moisture exudes from the butter? (might be completely wrong though :) )

In some of the books I've read, you rinse them with cold water first so the butter doesn't stick to them.

Hope that helps
