Local supermarket - 1lr prune juice 50p on offer.

Bought 4 litres
Made up to 1 gallon with tea made from x3 teabags in 500ml
500g sugar (1kg equivalent per gallon)
1 x tsp nutrient
1 x tsp yeast
1 x tsp pectolase (not sure if needed)

24 hours later - bubbling away nicely.

I love all things prune, but OH hates them.

Any made pune before and what did it turn out like?

i did,nt like it but that was the morning after effect of running to the loo lol
so i gave it away to a few people who never refuse a thing

Yes, the pectic enzyme is a good idea - plums have a fair amount of pectin and the prunerisation(?) process seems to make that worse.

I think you may find that the flavour will turn out to be way over the top. The standard recipe for prune wine uses 4 lbs of fruit and I don't think you'd end up with 4 litres of juice from that. However, I don't know this, so maybe it'll turn out as one of the seven modern wonders of the world. I'd have been tempted to make two gallons from it, though, but don't take my word as gospel.

Fermented to dryness and racked to new demijohn.

I've had a glass to test on transfer and it blew my head off. No real residual fruitiness - rich black / brown colour.

Will bottle and age it to see if it develops and more subtle flavour.

Still, I'm sure I'll drink it....

Update:

As suggested this was vile - far to intense prune taste, with a vicious acid bite.

Bottled x5 bottles:


1 - Month - vile
6 - Months - slightly less vile, but maybe I was just being generous
12 - Months - vile
16 - months - drinkable , oddly worked well with cheese.

Will update at 18 months.
