...pickle beetroot

I know it's a bit of a beginners question, but I've been given a huge bag full of beetroot and don't know what to do with it!!! I was wanting to pickle it but have no idea how to go about it, please help O Wise Self Suffientish-ers!!!
(and any other ideas for beetroot would also be welcome)

We just boiled the beets till cooked, rubbed off the skins, sliced them, dropped them into clip top jars, filled these to near the top with Sarsons pickling vinegar, job done.
We are also newbies to all this, hence going with the Sarsons rather than making our own pickling liquid.

I made bortsch (beetroot soup) once but managed to end up with a pink kitchen so never made it again!

Nice though, and maybe you are more controlled when you liquidise stuff!
Beetroot bread is lovely, and you can make cake with it. grate into batter for fritters, grated raw in salad....others will be along with more soon, I feel sure!!

Hi Puddleduck - I suggest you have a look in the cooking section "What's in the Pot" and have a scoll down as there has been discussion on beetroot recently, particularly beetroot cake and brownies. You can also go to the search function (top right hand side) and type in beetroot - you'll get loads of entries but if you scoll through you should find threads from previous years which have lists of all sorts of ideas - there are plenty floating about this forum!

Instead of straight Sarsons try Half water, half white wine vinegar, sugar to taste,some pickling spice,dry chillies and a couple of garlic cloves.Thinly slice the boiled,peeled beetroot,layer up your jar with thin sliced onion rings,then beet then onions etc. cover with your liquor(all boiled up then cooled and the bits sieved out) Don't know how long this keeps,never longer than a couple of weeks at our place!

Keep it simple is my views. Boil it up, rub the skins off, slice up and drop into jars of the cheapest vinegar. Tastes lovely after a few days :)
