elderflower cordial

Hi guys,
This is my first stupid newbie question. I have never tried elderflower before so decided that before making elderflower jam or wine, I would make a small batch of syrup to see if the family like it before harvesting a bigger crop.
I made the syrup by this recipe
http://jeremytaylor.pagesperso-orange.f ... flower.htm
Now my question is daft but what should it taste like? Mine is sweet enough but I think it tastes a little green (?). Does anyone know where I can buy elderflower cordial so I can do a taste comparison. Dont want to give the excess away to friends/family if its awful.
Elle

I make cordial which is fairly similar recipe but doesn't need steeping for days, just overnight. It should have a lovely perfumed delicate smell/flavour - I guess it is hard to describe. If it shouts summer at you and you want to drink more of it, it should be about right. :flower:

For the jam, don't you mean from the berries rather than the flowers?

on my hunt for recipes for elderflower I came across one for jam. Haven't been able to find it since and I didnt bookmark it, oops. My mother in law has tried it and said that it does taste right so I tought it was a success. However, my mother in law showed me her small bottle that I gave as a thank you for baby sitting and its started to ferment. I have checked mine and there is a bit of cloudyness that wasnt there before and a small bit of fizz. Do you know how I managed that or is that normal?

Welshmum, good to see you found my recipe. I now have a new version: http://www.jeremytaylor.eu/elderflower_syrup.htm My version uses more sugar than other recipes but that means that the syrup is less likely to go mouldy. The drink is amazingly refreshing - experiment with the amount of lemon juice you add to the drink but it at its best when it is chilled.
