should i freeze fudge?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I've made a load of fudge and tablet and truffles as Christmas presents. Should I freeze it or will it keep till next Friday do you think?

I wouldn't freeze it - the water will make it turn to mush. Because of the high sugar content fudge should keep well for quite a while in a sealed container

Ooh - should I take it out of the fridge then? Keep it somewhere more 'dry'?

Once it's set and cool it needs to go into an airtight container

Brilliant, thank you.

No danger of it all getting eaten here - I've had quite enough in taste tests and quality control over the last few days - made myself quite sick of it!

(except maybe the chocolate and rum fudge I made yesterday. It might get a few further nibbles when I cut it into squares...)
