What can you make into cordial apart from elderflower?

I have a feeling that's gloriously ungrammatical but anyway... I have 8 litres of elderflower in the fridge - make that seven, we've blitzed one already - and I'd quite like to get something else on the go. I've heard of nettle cordial but never manage to find young tips of nettle - ours are all old and tough. Is lavender cordial potable, and are there any herbs that lend themselves to cordial? If anyone knows I'd love to hear.

i make lemon cordial.. not foraging.. but still its lovely.

I've done rhubarb & raspberry so far this year. I guess you could pretty much use any fruit simmer it down, add sugar & strain it through a fine sieve or muslin. I need to play with the amounts of sugar though as I seem to be making a pink looking sugar syrup, which is too sweet to get the flavour of the fruit through

Those are all wonderful ideas. The lemon sounds particularly delicious and what my husband wouldn't do for rhubarb cordial! Ideal as a friend has a huge rhubarb patch and doesn't like it so she's always giving us more than we can carry. Thanks for the link too. A cordialtastic summer coming up and good news for our dentist with all that sugar!

I've heard somebody mention lemon balm - kind of lemon cordial done the local way...

I was thinking just the same thing, as the elderflower cordial has gone down a storm here.

I have seen Clara mention Lemon Balm cordial, but it also had something else with it. But I can not remember what.

I'm sure you can make elderberry and blackberry cordial too
