cider question

I am making the ciderish from the website and it needs to be left to fermentfor 2 weeks, which is up tomorrow. We are going away last minute tomorrow till wednesday and i wont have time to deal with the cider, can i leave it another week?

whenever we make cider (110 gallons yearly) we just bung apple juice and sugar in a whiskey/brandy barrel and leave it over winter

when it tastes ready, it's drunk
