how do you dry homemade pasta for storage?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

seems a few people on here do dry their homemade pasta.
I am interested to hear how, and how long it takes to dry.........thinking of tagliatelle, pasta sheets, bow ties.
how long do they keep and how do you store them.

I have seen JO make pasta on TV years ago and dry it but unfortunately even his book doesn't explain well enough HOW TO.

It takes as long as it it takes - normally two days for me but it has taken four. The important thing is to make sure it is completely dry before you store it. As mentioned before, I place poles between two chairs and hang anything which can be hung (no bows I'm afraid). By placing a clean towel underneath you can pick up any that fall off (they tend to do this as the pasta becomes brittle and some dry quicker than others). As things dry they go into airtight containers and can keep for a couple of months.

We hang it over the laundry drying rack! Put a teatowel underneath to catch anything that drops, but it does the trick & there's lots of room for lots of pasta :mrgreen:

but, if you hand longish pasta over the drying rack, how do you store those loooooong strands then.
do you break them up? I would feel sorry for that....

For long strands I use a big plastic container which is meant to house cereal (roughly the same size as a big cereal box).
