new to the internet!
Hi, This is the first time i have joined a forum, not sure I actually have yet! I am hoping someone out there will have some advice as to what to do with all my courgettes! I have two allotments and try to grow as much of my own food as possible, but all the work involved doesn't leave much time for cooking! There is just me and my daughter at home, we are mostly vegetarian, mainly because we live a long way from any shops! This year I have started making my own wine, which is bubbling away happily in the potting shed. i enjoy reading everyone's comments so hope to hear from some of you fellow self-suffiencers!

Zucchini Bread
(zucchini being courgette in american)
2 cups sugar
1 cup vegetable oil
2 eggs
3 teaspoons vanilla
2 cups grated zucchini
1 teaspoon salt
1 teaspoons baking soda
1/2 teaspoons baking powder
3 cups flour
3 teaspoons cinnamon
Blend all ingredients together. Bake in greased loaf tin at 350 degrees for 1 hour or until done.

Cougettes are one of my favourite vegetables - I've finally got two babies on my one remaining plant (the others - all 5 of them were eaten by woodlice!!)
All my recipes are vegan but you just make the substitutions where necessary.
Actually - I'm gonna go and post them in the "What's in the Pot" section - keep everything neat and tidy.

I hang my head with shame...... maybe it's the way my mum used to cook courgettes, but I've never liked them...
Maybe I should try some new recipes & give them a good go!

at the mo we are just enjoying our courgettes fresh - just cooked very briefly in a little butter.. but still crunchy,
I also make a variety of pasta sauces, with courgettes.. and freeze lots for putting in casseroles chilli etc

Hiya, and welcome!
If I get any decent number of courgettes this year (planted too late), I shall make pasta sauce again, for bottling and freezing. I also generally freeze some raw (just sliced), for all sorts of stews/soups/veggie dishes.

so glad you brought up the subject of courgettes,my good friend brought round some sunday and apart from frying in olive oil i had never cooked them before,and she told me how to do that!she has a glut of them in her poly tunnel and often passes veg my way,me being not so good with the growing although trying to be, no poly tunnel but thats no excuse, love the sound of the bread,that will be my first try today,and of course will pass all the recipes to my friend,shell

thankyou so much to everyone who replied to my first post re the courgette glut! The bread recipe from Quizmaster is in the oven as I type! Have frozen some, everything goes in the soup! Have a fritter recipe to try tonight, with chilli jam. If you eat too many carrots, your skin turns orange, will we turn green? thanks again. Prison Break Fan.

I found a family of slugs on 12 of our courgette plant, or courgette stalks so count your self lucky. There is one hanging on in there but no courgettes yet! Welcome to ish

Hello and welcome to ish.
I love courgettes and my fav way of using them is either to cut them lengthways and scoop out the insides and stuff them. I usually use a combination of rice, onions maybe mushrooms and a spicy tomato sauce with a few breadcrumbs and grated cheese on top.
Or I use a potato peeler and cut them into very fine ribbons and use them on top of a pizza or cooked very quickly in a pan with some black pepper and chilli olive oil ( really yummy!) and by cutting them that way, it makes a few courgettes go a long way!
