Store veg in kilners, make chutneys and jams, syrups from fruits and dry them.

I use my freezers for meats not veg predominently, but have also puree pumpkin, and apple frozen in portion sizes, and chopped veg, and then beans and peas etc.

Box veg in sand and store in cool dry places things like carrots, beets and turnips keep very well.
