Gone off milk recipes

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I stick my milk in the freezer, and pull it out as I need it. If necessary, I put it into smaller containers first, so that I don't have unusable quantities hanging about.

I have heard people say that you can't freeze milk, or that it separates out when you thaw it, or that it won't keep for long afterwards. I can only report that none of this has been a problem for me.

The only problem is that you have to anticipate your need for milk a few hours beforehand, so that it has time to thaw out.

my mother freezes all out milk...she goes shopping once a week and buys loads of the stuff, and then freezes.

Makes nice iced coffee that way though!

I freeze a lot of milk too. Anyone who tells you it can't be done, or that it affects the milk in any way, is talking out of their seat. It tastes exactly the same, it's the same in every way. I freeze full fat milk, skimmed milk and semi skimmed. If she says she doesn't like it, just don't tell her. If she can tell the difference I will hang my head in shame, but I bet she can't.

You can't make yogurt with "off" milk (unless you have been extraordinatrily lucky and it has gone off by spontaneously turning into yogurt). You need fresh milk for yogurt.

yep - regularly freeze milk here - works just fine - only thing i found that the cream and skimmed parts defrost at a different rate - so if you nick some for your coffee before its all thawed - you are prolly getting less cream - but thats hardly a problem. also i defrost it in the fridge - so the thawed part stays at fridge temp - and also your fridge gets the benefit of the cold.

handy when camping - take a carton of frozen milk in your coolbox - keeps everything cold and then you have milk!
