Update... Just made blackcurrant cordial - used the old aluminium steamer to extract a large saucepans- worth of juice and just added sugar... Not quit as strong as ribena, as it can be drunk neat... 50/50 dilution is good ...
Tons more to pick.... Still looking for a reliable wine recipe.
I am guessing that the steam juice extraction method is "gentler" than blitz-and-soak coz the cordial has a very rounded flavour.... Could be wrong.

I'm having a rubbish blackcurrant year so am
blackcurrant icecream is the DBs and cassis is good.. and blackcurrants are a must in summer pudding

Mmmm, not fair. My blackcurrant bush hasn't done too well either. I fancy the blackcurrant milkshake though. That sounds yummy.

I picked two full carrier bags full on Sunday, got at least that still on the bushes, should be knocking on 100lb of fruit this year.
I made Blackcurrant mouse last night which was absolutley lovely.
Boil fruit with sugar, sieve, cool, add 3 egg yolks when warm, stir, whisk whites with lemon juice and caster sugar, fold, whip double cream, fold, put in glasses, chill....... serve with runny cream, absolutley lovely!

I've frozen 7.735kg from my 2 bushes, 3kg more than last year!!!

Bushes are about 5 years old now, I do hope to god they don't keep on producing more and more kilos as each year passes.

I made blackcurrant cordial at the weekend in the Steamer, then used the "pulp" to make wine.
Yesterday I made blackcurrant Ice cream, very rich, but lovely.

That's a real shame

- I don't understand why the birds are not interested in my currants, or even my raspberries any more. I've stopped netting the rasps as it was too hard to pick them.

Not complaining obviously it's just wierd!
