Preserving garlic

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Ah I see, Here in Tassie it seems to be folklore that if the garlic is sprouting it wants planting as I have discovered that plant on the shortest/harvest on the longest day of the year doesn't give a great size bulb so I am trying to plant when they sprout...if they did so all the time that could get perplexing and the peas are a worry.
I have heard all kinds of crazy botulism things about preserving garlic and seem some interesting blue results which is apparently botulism so I have been to alarmed to try it. I think there is only a risk if it is stored in oil. As for the blue.. that requires some more research on my part.

I just want to say thankyou to Oddsox for the freezing garlic tip. The best tip ever!! I just get a couple out the freezer every morning, pop in the soup, and Bob's your uncle! (or sister's husband in my case) This site is the best ever for handy hints. pbf.
