It is always said that floury potatoes are best for roasting or baking, but I really hate floury potatoes. I find them too dry but my husband loves them. Waxy potatoes for me.

Oh spuds from the ground roast fine, as do new spuds.
Alot is down the variety but thats not the whole story as this year all teh new potatoes round here are much more floury than usual so annoyingly DON'T boil well- but make exceptionally good roasts (which I eat several times a weekt hsi summer!).
So it's quite possible you've had good desiree roasts fromt eh shop in teh past and that this year your desiree are jsut a slightly different texture and it tips the balance between fluffy and a bit ....well...hard.
Haven't started my desirees yet but the charlottes that should have been salad types just made wonderful roasts this year- maybe that dry July?
