Have cooked these parsnips, Chad....see the need to uplift with spices or carrots although the puree parsnip is a different sort of flavour, so have frozen them for adding to casseroles later. Will try the parsnip/apple recipe another day, enough excitement for now.

Not being the type of person who likes to gloat (yeh right :wink: ), I wanted to show u my first digging of my parsnip patch. These little lot are the result of about an 1/8th of the plot.

I do have to admit tho that by not thinning them out I have lost a serious amount of big parsnips. Some are so small I really cant be bothered to process them so will miss out completely. Have definitely learnt my lesson for next year!

I just brush 'em sideways, get most of the muck out, then usually put them in a slowcooker or cut up smaller in a steamer.
One long row will last a winter against several rows if they were taters.
A free thing hereabouts, probably your neck of woods too is Sugar Beet.
Huge lumps fall off trailers regularly, nearly put lorries.
You on rocky land and soil looks light.?

No our soil is awful, this is a bed full of cheap bags of peat. Its the only way I can get anything to grow in the ground!
