Spicy Sweet Mango Chili, Tomato Chicken (FIITC Recipie!)

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

WARNING: It might be a little hot for those not liking spicy foods!

Ok firstly FIITC = Found it in the cupboard....

This is a little thrown together (as you'll be able to tell!) because I didn't measure anything out!!

This is a concoction I came up with tonight, and liked it so much I thought I'd share it with everyone!

You can probably substitute the chicken with any meat or quorn...or no meat? No idea really!

ingredients:
1tsp Sweet Mango Chili Sauce (got mine in s*****field..anyone who can make their own, go for it!)
4 baby tomatoes
1/2 clove garlic
1 shallot
3 runnerbeans
1 breast chicken (or whatever you want to put as a substitute)
some peas (I like peas... don't have to have em...)
Rice (I used special fried rice... but I guess any would do!)

- Put veggies/fruit (not peas!) into a blender with a dash of water (probably about 4 tbsp)
-boil the rice and start cooking the chicken in a little olive oil (or whatever you use)
- add the blended ingredients to the chicken (can strain the oil but I didn't bother..)
-add the sweet mango chilli sauce
-sprinkle in some freshlly ground black pepper
-add a little fresh basil (or died I guess!)
-add the peas to the rice
-strain the rice
-combine the chicken and sauce witht eh rice
-cook for a bit
-serve!

Serves 1-2 people (add another chicken breast for 2 people or double whatever meat/meat substitute you're using)

Let me know if anyone else likes it... ir if I'm just slightly odd flor liking this weird concoction!
