You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

i peel turnip, but definitely not potatoes even if i am mashing them, beetroot gets peeled after it is cooked.
i do peel veggies if there is something wrong with the skin eg slightly green potatoes or cutting yucky bits out of carrots, but i can't see the point of wasting good food

the only things i peel to cook are
parsnips
swede and non-organic carrots (no garden, not enough money to be organic all the time).

potatoes are generally skin-on because we don't eat mash that often.
