Anyone got a mayonaise recipe?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Anyone got a mayonaise recipe?

I have been trawling the web for a really simple home made mayonnaise recipe one that can be made in a blender - then I thought that one of you lot might well have a good one.

I need one for the chapter on the selfsufficientish office in a bit about sandwiches. If anyone has a recipe that they would not mind me putting in the book then please post here. Thank you :andy:

1 egg
1/2 tsp mustard
2tsp vinegar ( I used white)
salt and pepper
1/4 pt oil ( I used olive)

Break egg in to liquidiser, add mustard, vinegar and salt and pepper

Run liquidiser on full speed and slowly pur the oil through the hole in the top voila totally lush mayo !!


I have recently bought a Kenwood Chef and got this from the recipe book tried it out and it is really creamy but with the tang of vinegar yum yum yum :cheers: :cheers:

It is a while since I last made mayonnaise but, as I recall, the method was to take some egg yolks, add a pinch of salt and start whisking (... yes, cheating with an electric blender rather than relying on manual power). You then slowly begin adding olive oil. Initially that should be done a drop at a time but, as the emulsification starts to happen, you can start adding more generous quantities.

Like a lot of my recipes, amounts are rather vague! However, you can give it a twist by adding some chopped herbs from your garden - I found sorrel worked particularly well.

Play around with the blend of oils ... I find just olive oil to be overpowering so tend to use sunflower as well as olive.

Strongly flavoured oils: sesame, pumpkin seed etc. are best avoided unless you want to match your mayo flavouring with another dish.

Rice husk oil is an oil I have just found and it has a very mild flavour - I might try this with HFW's mayo recipe. Thanks for this topic!

From bitter experience, the oil has to go in SLoooooooooooooowly. Like as slooooooow as a week in the jail..... :lol:

Had the same experience here ... literally a drop at a time or it won't emulsify and you'll just end up in a big mess :oops:
