Brie... etc

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Brie... etc

Post: # 33542Post Shirley »

I think eating the white stuff on brie style cheeses is ok.... but is a matter of taste. Personally I don't like it... but David does...

Thought I'd ask a perfectly pointless question and find out how many of you eat the white stuff on brie..

And while we are on the subject... what goes well with brie??

You mean the "rind"? Definitely. Some cheeses have inedible rinds (some are probably well-nigh toxic and look as if they have been kicked around on the cowshed floor) but with brie you can eat every bit. Take a thin slice with rind and core for a blend of textures: delicious!

Cut the brie into small pieces (about the size of a chicken nugget - sorry, can't think of a better simile for some reason!) and dip into egg then breadcrumbs. Deep fry for just a minute and serve with thinned-down redcurrant or cranberry sauce for dipping. Utterly divine. Also good with goat's cheese and other soft cheeses.

Darn, I'm one of the ones who said No, but I didn't mean it! Yes I do eat it on Brie but not the rind from most other French cheeses, some of which are just like Wulf says, particularly Cantal. Sorry!
