I still haven't got round to bottleing that elderberry stuff in previous post. I need to do it soon though as I'm going to The Homebrew Festival in two weeks time, and will take some with me for appraisal.
Global average carbon emissions - one ton per person per year.
Current emissions in UK – 9 tons per person per year!

For my first ever homebrew attempt (well, aside from a failed apple juice cider many years ago) I'm trying the bay & rosemary ale from Andy H's book. Scaled back ingredients to give me approx 7l liquid in my fermenter. Been going for 11d now. Not far off bottle time once gravity readings flatten off. Tastes nice. Bay def adds character. Looking forward to sampling it! :drunken:

Sounds tasty, let us know how it turns out. Try and keep some for a few weeks. My OH makes beer and it definitely changes (and improves) in the bottle over the space of a few weeks. It hadn't occurred to me that beer matures but it does.

If you can find the patience (I rarely can) a month in bottle is always best for conditioning, 2 weeks warm 2 weeks cold.

well so far so good. bottled on NYE & still untouched! beginning to clear nicely after a cloudy start. Fingers remain crossed :)

Our black treacle beer seems to be a complete bust. We bottled it just before Christmas and have tried a bottle every week since then. Flat as a pancake and still tastes like black treacle.
Don't think we'll try that again. Fortunately the treacle was a freebie - left over when we closed the bakery.

Turned out nice! Slightly ginger aroma. Subtle herbal flavour. Recommended recipe. Will likely brew this again.

What kit? Currently have a cooper's English bitter (20L) and a brewferm diablo (10L) ready for bottling tomorrow.

Hi Brewtrog, its a Coopers Dark ale, I did one years ago and thought it was awful initially but after I let it mature in a pressure barrel for a couple of months it excellent. I have a small stock of kits I have brought with me so hope to get a bit of stock made
