Bottled 18 litres of TC this evening (9x 2l pop bottles).. 1 DJ of raspberry TC and another DJ of cherry TC to bottle tomorrow, and then it's time to start a blackcurrant TC.

Edit: And decanted some of the elderflower into 20cl presentation bottles to have some in stock as handy gifts to familiy and friends - not cheap bottles, but destined only for those we know will return them.

sure:
3 litres of pressed grape juice not from concerntrate I use aldi white grape juice
675 g sugar dissolved in 500ml of boiling water
1 tsp citric acid
1tsp pectolase
1 vitamin b tablet(in recipe but I never put it in)
1 tsp of activated wine yeast(put in warm water with some sugar until it froths)
Mix all together and top up demijohn with boiled cooled water to shoulders then add yeast.Shake daily for first week then when fermentation has stopped allow to settle then rack,continue until no deposit forms,I add a crushed campden tablet after first racking then top up with boiled cooled water.I usually rack 3-4 times then leave for 2 months and its ready.It usually tastes ok at the first racking.It will taint and taste terrible if you leave it sitting on sediment for any time so keep an eye on deposits.Start now and be drinking it end september.........

Just put a 40 pint kit of young's bitter in the barrel to mature for 28 days.
and started 2 gallons of pineapple juice and orange&carrot juice wine
ingredients will make 2 gallons.
2lt-pineapple juice.
2lt-white grape juice.
1.5lt-orange&carrot juice.
1700g-sugar.
1-cup of strong black tea.
1tsp-GP wine yeast compound.(1 tsp per gallon)
water.

this is the one i used last year and was very good so doing it again this year just a lot more of it
Cherry wine
Ingredients
2kg/4lbs Cherries( mine are the sour cherries )
1kg/2lbs Sugar
Half a cup of cold tea
Juice of two lemons or 6 tablespoons of lemon juice
1 teaspoon yeast nutrient
4.5 l/1 gallon water
1 campden tablet
1 teaspoon yeast
Method
Put cherries into fermenting bin or bucket, cover with 3 litres/6 pints hot water and leave for 2 days. Add campden tablet.
After 2 days boil the rest of the water up and add the sugar, stirring vigorously until fully dissolved.
Strain the cherries through a muslin/cheese cloth into another fermentation bin with all the other ingredients, ensuring that the yeast and nutrient is not added until the water is hand hot.
After 10 days decant into a demijohn with airlock attached. Rack after 2 months and do not bottle until it has fully finished fermenting, which could take up to a year. Cherry wine improves with age and is best left to condition for at least another year, the results will be worthwhile!

yep it never got as far as a year but put 15 litre on the go this year so some might make it

now to go and sort out the 45 kg of wild yellow plum i just pick
going to have lots of plum wine hehe

Started two gallons of 5-alive tropical fruit blend juice wine. :iconbiggrin:
it's fermenting very nicely in the :sunny: weather.

fruit beers now on the go
just useing the nettle beer recipe not sure if it will work we will see
got strawberry
raspberries and green gage going hopefully i will have a good result as got party next monday
