what to do with chicken?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

what to do with chicken?

Hi guys, tonight I made roast chicken for dinner, a firm favourite in this house so a guaranteed winner with the kiddies!! I have scraped the carcass and have loads left, probably enough for another 2 meals.
Any ideas what I could make? Everyone is a bit sick of the usuals so could do with a bit of inspiration. Oh yeah, biggest challenge is that r youngest daughter has coeliac disease and is mega allergic to dairy!! So when I cook it has to made for her then if anyone wants to add cheese etc at the table then that's fine.
I was brought up on a meat and 2veg diet and I struggle to branch beyond that!! Whereas my hubbie will eat anything and hates boring dinners!!!

Boil the carcass up for stock, and use that and some meat to make make rissotto add some veg to it too. Any cheese can be added at the table.
Stay at home Mummy to Orin 8, Trixie 6 and Temogen 4 . Also three Chickens Dottie, Poppy and Dr Mumbo. Three cats called Flossie and Pickle and Lexi.

Chicken crumble: Use some of the chicken stock to make a gravy for the chicken (and add whatever your family will eat to pad it out - I'd add leeks and mushrooms if I could get away with it) (in case you're not used to making gravy from scratch: melt a bit of butter/marg/whatever fat you use in a pan, stir in flour, then gradually stir in the stock. There are other ways of doing it). For the crumble, I have learnt by trial and error that sweet crumble mix minus the sugar doesn't work! I now do about half of this (flour and fat) and the other half breadcrumbs and maybe some crushed nuts or pine kernels. Actually, just breadcrumbs would probably be better.

Pasta with chicken sauce: Like the crumble, but with pasta instead of crumble.

Chicken in white wine and tarragon: The only ingredient not in the name is lemon juice. Very indulgent (especially if you add cream, which you probably won't). Can be stretched/made less rich by using half stock and half wine. Serve with whatever you fancy, but new potatoes and salad would be good at this time of year.

Chicken noodles: Sauce/dressing consists mainly of oil (I use sunflower) and soy sauce. I also include Worcester sauce, honey and lemon juice. This one makes a little chicken go a very long way, and my husband loves it :iconbiggrin:

Put it on pizza. This also stretches a little out a long way.

Just eat it cold with hot new potatoes and salad/veg.

I love roast chicken :flower:

Saute asparagus in a little oil, when just turning soft ad flour and tir in so that it's coating the asparagus Gradually add chicken stock to make a sauce. Throw in the chicken and season to taste. Serve over pasta.

Definitely boil the carcass, you can roast the bones for a few minutes first if you want a slightly stronger flavour. We usually freeze the meat in portions and the stock in old takeaway tubs and find it does us for quite a few meals.

One of OH's favourites is chicken pie. Make a sauce with the stock. Fry up an onion and garlic and add a load of cooked veg (either leftovers or freshly cooked)and tarragon. Pie crust either top and bottom or just on top and Bob is your very happy uncle :lol:

Or fajitas, with some re-fried beans, stewed (in olive oil) peppers, shredded lettuce, sour cream and wraps. Or whatever you want to put in - they're our favourites.

Salad Greens and Rocket with Dressing, Roast Cubed Sweet Potato, Chicken pieces, warm tossed salad.

Boil Carcass for stock, use stock to Boil Rice with Smoked Paprika, peppers, Currants, add chicken at the end for a "Morocan" Rice, serve hot, then also cold if any left.

I just made chicken mayonnaise and served with warm boiled new potatoes and a garden salad

Make some home-made mayonnaise if you haven't any in the fridge.

Cut the chicken into chunky julienne type strips and put on a squeeze of lemon juice and some nice sea salt and black pepper, some sliced spring onions, or sacrifice a large onion that isn't performing as well as it ought.

Mix all together sprinkle with a little paprika or cayenne pepper, then serve with the potatoes boiled but allowed to cool a little, and a nice garden salad

That moroccan chicken sounds AMAZING and is totally making me hungry :)
I find that caramelising some onions and putting those in a bun with some spinach (A LOT! haha), chicken and satay sauce (and feta cheese for me) and maybe some mushroom or an egg if you are REALLY feeling like some deliciousness is just the perfect way to use up chicken. Serve it with some wedges or even just by itself, or with another burger :P I normally make one with the chicken, satay sauce, onion and spinach and then I make one with spinach, egg, satay sauce and mushroom for a vegetarian component. Yeah I like my carbs :P It would go well with some pumpkin soup or something as well. :)

chicken ala king is a great alternative to chicken pie and a good way to use up stake bread :iconbiggrin: and this is a great recipe for it

We always eat it cold with salad for several days after. Cold bacon, chipolatas, stuffing and roast parsnips are fab too. I can never decide whether I prefer it hot roasted or cold with salad the next day. Why go to a lot of trouble when you can have several easy meals after a roast? :dontknow:

For a quick meal, you could cook some pasta, stir in some pesto and ad the chicken. Serve it with a green salad as well.

When i do a roast chicken i like to make chicken and vegetable soup the following day to use up the leftover veg and any leftover gravy - any potato will thicken the soup too, and you don't actually need much chicken, so may be able to get another meal too (we like chicken salad wraps with a bit of mayo).

Coronation chicken n jacket potatoes, I am sure there is a proper recipe but I just mix cury powder with mayo and chicken bits. Add herbs and a green salad.
I love cold chicken and always make stock from the carcass...BUT does anyone else not like the smell of the boiling stock?? :pukeright: I cannot understand why I love the taste but hate the smell??
