I've found a "cash and carry" locally that isn't a "cash and carry" at all. It's a huge, sprawling, unheated, scruffy, leaky ex-industrial building where some bright spark has decided to sell near-out-of-date stuff (canned fruit nearing its sell-by date !!!! I ask you) he's picked up for dirt cheap. And he's selling it for dirt cheap. So what have I got brewing now?

A couple of gallons of strawberry wine from large tins sold at the price of 3 for £1 (I've been profligate and used 6 tins per gallon). 15 gallons of peach wine from very large tins sold at 49p each (that's 1.5 kg of peaches in 1 kg of grape juice per tin, which is a dream of a mixture for a winemaker) - I've really stocked up on those. And I've got other (lots of) tins of various fruits from the same source sitting waiting. The bloke who does this thinks I must be mad.

I'm going to have difficulty finding room to make wine from my own stuff next year - there's certainly no room for the next three months.

Well, no - I've decided to go teetotal.

(Just where is the smilie for flying pigs?)

The only real problem is finding the storage capacity. I reckon I could easily make 90 gallons a year of the peach stuff (or, at least, until his stock runs out). That's too much even for me. Even if you did come for the party, GA. Well, maybe not too much, then :tongue:

Just had a quick taste of the elderberry wine project.
Most,if not all of the added sugar is fermented.
It tastes fruity,dry and,well, ''full-bodied''.
But judging from the minute bubbles that continue to form the yeast is still active.
Just added another cup of sugar to see if it will start fermenting faster again.
...and to push the alcohol content to it's maximum. :drunken:

A whole load of plums, halved and de-stoned in my rumtoph with vodka, getting ready for christmas.

Does it count that i'm feeding my prune/nut/chocolate christmas cake with port (it smells like it's brewing) wink

Well, I've got 5 gallons of wild black rasberry wine that was started last june, it is still aging in the carboy.
I've just brewed up a 5 gallon batch of Brown ale for a Benefit tasting/silent auction/raffle in January for the family of a 4 yr old with Brain Cancer.
I have about 25 lbs of frozen gooseberries waiting for the Beets from a few friends for this years GuzBeit wine. I may not use all the gooseberries in the guzbeit, I may make some Gooseberry wine too.

Well the upside is we've got a gallon each of pineapple (never tried that before), apple, thistle, vimto and chickweed all popping away nicely - just don't ask OH is having a moment I think. The gallon of herby wine is a bit pungent (lavender I think) so we've added a bit of extra sugar now it's stopped because it's just not right dry.

We've also started Andy's beer recipe for the second time - last years was fantastic. But this year I bought some posh hops instead of the ones I bought to make sleep pillows :lol: and I chucked in a small handful of Bog Myrtle leaves off a stem that a friend picked for me while walking her dogs. Don't know if it'll affect the taste at all :dontknow: And we've got a cider kit on the go (the red wine kit was a great success so we're branching out :lol: )

The downside ( there always is one isn't there :( ) is that we have 4-5 gallons of red and rose (second ferment) wines that we've failed to label and now have no idea what they are - all is not lost however - a sneaky taste while racking gives hope they'll all taste quite nice even if we don't know what we're drinking :lol: :lol:

Like Green Aura, I have several gallons of wine where the labels have faded, so my daughter and I look forward to happy evenings with a glass of unknown! pbf.

Just bottled my very first elderberry port,8 litres of it.
Drank the remaining 3 glasses with the missus.
This stuff is surprisingly good...and potent. :drunken:

Can home-made wine be stocked in screwcap winebottles?

We bottled two gallons of mixed fruit this weekend, both made from the same fruit (it looked too good to throw on the compost after the first lot) but with the addition of some bananas. That one's a bit rough but not unpleasant. The other (the first fermentation of the fruit) is delicious :cheers:

I didn't like the new hops in what we call Andy's Brew, but after another week in the bottle they've improved no end - or I've got used to it.

OH made a cider kit in time for Christmas but it's really disappointing, very watery - he insists he didn't miscount the water. Anyone else had this problem?

Yes - but check it first. Half-fill the bottle with water, put the cap on finger-tight and turn the whole thing upside down. Check for little leaks - if you see any, the caps not good. Even if it's good, don't think about keeping wine under it for more than a year. You can get sherry-type stoppers to fit, so don't throw the bottles away even if the cap's no good.
