How Do You Like Your Meat?

For me it's medium,Mrs BA anyway so long as it's food.........

How do I like my meat - I suppose I have to say rarely but not rare. Much prefer to eat vegetables and fish, and only occasionally meat. This tends to be when not at home, when cooked by friends or it is the better option in a cafe or restaurant. Then i will always go for offal, rabbit, or pigeon if available. Eating beef I just don't understand, except as steak and kidney, I think it's chewy, tasteless, generally bad for the environment and there are much tastier alternatives. .

Rare isn't undercooked. As long as the centre of the meat (including chicken) reaches the necessary temperature, it's safe to eat - and that means that you CAN eat chicken slightly pink. The question arises, though, as to why anyone would want to.

Mind you, on questions like that, I often wonder why anyone would want to eat pork at all - I can't even taste the stuff, it's so bland. Gimme bacon!!!!!!! I like my beef properly cooked (although I think that means pink in the middle), but it's getting difficult to find beef good enough to do anything with. Lamb the same.

It's interesting, though, that meat and fish is as tender as its ever going to be when it's raw - cooking progressively toughens it (unless you go past the "cooked to death" point, when it all gets tender again - but horribly mushy and fibrous).

I don't really eat meat when I am out, but if I did order a steak it would definitely be rare - I know a chef who saves his old steak (well, probably not actually gone off, but the oldest of the lot in the fridge) for the punters who ask for it 'well done', as he can get away with it- wheras he can only use fresh for the 'rare' ones, or the customers can smell the whiffy gone-offness! :shock:

I thought this might just be my unscrupulous chef friend, until I read 'Kitchen Confidential' - apparently this is a trick used by chefs world wide. Bleurgh!

That is just my husband and I in reverse, especially with roast beef. I cook it, eat the middle and he eats the outside... Other than for beef, I will eat all my other meats well cooked.

when i was in dermeern, holland afew years ago i went into a bar for lunch and the only thing on the menu in english was "firemans steak" so i ordered that. when it came it was almost raw and swimming blood. almways have mine well done now :pukeright:

Steak - medium to rare - more rare than medium
I've taken to roasing my meat in the slow cooker. The last time I did beef it was well seared on the outside and still slightly pink in the middle. No blood and extremely tender!
Chicken - well roasted with lemon, thyme and garlic - until it falls off the bone
Lamb roasted until it falls off the bone
Pork roasted in cider until it falls apart
Basically unless it's steak I like it so tender that I barely have to chew!
Fish raw as appropriate or cooked just so that it's done but still firm and juicy - I hate dried out straw-like fish!

I have and always will like my meat cooked well enough to not be red in the middle. My lamb I like so well cooked that it falls off the bone, the same for my chicken. Pork, I was always taught, should be cooked properly because cooking kills a parasite found in pork :pukeright: . Beef for me will always be well-ish done but I tend to only have steak at home now, meals out have resulted in being presented with a boot leather steak (as bonniethomas06 said).

Hope this isn't going off subject,but I love Bollo Misto (mixed boiled meat).Inever bother with steak,unless it's casseroled,but find that if you boil the meat before you roast it,it's really nice,especially mutton.

Beef; steak and roast joints medium-rare, brisket cooked for hours, even all day, on a very low heat in beer with veg so it just falls apart.
Lamb; slightly pink
Pork; I prefer rare to overcooked.
All of the roast red meats I let rest for at least 20 minutes once they're out of the oven. I don't cover them with foil either. Just make sure the plates are hot.
Not had a chance to try mutton, but I'd like to.

Chicken I roast with some white wine in the bottom of the roasting pan and a bundle of foil up it's bum instead of stuffing. I like the breast meat to be on the wet side of cooked. I'm not a Turkey fan at christmas as it always seems to be overcooked.

I like to cook meat slowly if I have the time, but I get so hungry I don't have the patience for it most of the time!

Ohhh, good question!! Like most people here I'm on the well cooked side for pork and chicken, I don't eat fish at all (allergies!) so can't comment there but when It comes to red meat.... I would have to say I like it on the raw side - steak and bacon are amazing totally raw, if it's a good cut!!!
I have a friend who says as long as it stays still on the plate its cooked enough :lol:
I think it comes down to years of restaurant embarrassment when my mum would always order steak and always send it back a dozen times as it wasn't cooked enough!!

But I'm not fussy - if the food is good I'll eat it however it comes x
...um, how can I make that?...

My mate used to eat his completely raw, just seared on both sides for a bout 2 seconds.
