Nettle Jam

Nettle jam? No, that's a new one on me, although I understand nettles are full of pectin so I suppose it makes sense. Would they taste nice in a jam though, having no fruity juice as such?

This question has been haunting me ever since I mentioned it on the River Cottage Forum; it was read in a magaine article, but there was no recipe. Looks like I'll have to have a go myself............... :lol:

Erm why would you want to make nettle jam? Sounds a bit desperate to me. I can send you some damsons. There's no need to go to extremes. I've made nettle soap, and I can understand nettle soup, but nettle jam? That's only a small step away from grass-clipping wine.

can't find a recipe but you could try it before you make some - this place has a couple of types

It practically gives you the recipe too!
White nettle petals, sugar, lemon juice (acidifier) and fruits pectin. Prepared with 5g of petals for 100g. Total sugar content: 62%.

I would actually like to try this but my Nettle patch is rather sad looking - I will have to plant more Seeds and make it next year.
