hi. i stay in central scotland. and im very new to wild mushrooms. in the last few months. i am lucky to stay near a almost wild glen. that in the last few months. has provided me. with loads of pennybuns. and chanterelle mushrooms.
they have all dried up or died off now. what wild mushrooms. if theres any available at this time of year. should i look for now....all replies greatly appreciated..................jim..............................................................................................

I slightly hesitate to suggest this one as it is possible to mistake for Sulphur Tuft, so do take great care over your identification. But during the winter, even though there may be snow or frost about, you could find Velvet Shank (flammunlina velutipes).
It's the wild form of the Japanese soup mushroom Enokitake. When cultivated, this has long stems and is pure white but the wild form is terracotta with a darker velvety stem (as you might expect from the name).

Picked some more field mushrooms today, and there's at least one more growing out in there... OK, not very exciting, but they were nice in my barley "risotto"!

Thanks hedgehog pie and ina. i know of 2 places where large white horse mushrooms grow. and ive had 2 crops. from them so far this year. so hopefully there will be more. il google those ones you mentioned hedgehog pie. thanks for your replies
