Had loads of cherry tomatoes this year - so I made this 'amuse bushe' (a pre-starter) for a dinner party.
Cut 2.5kg cherry tomatoes in half into a big bowl. Add
a large chopped shallot
a quarter of a fennel bulb cut into chunks
2 large cloves garlic cut in half
a tablespoon of sugar
a tablespoon of salt
a few drops of worcestershire sauce
a few drops of tabasco
a large handful of fresh basil
some chopped thyme
Mix well and add (in batches) to a food mixer. DO NOT BLEND but pulse three times for about a second. You just want to break things up. Put a double layer of muslin in a second bowl and add the tomato mix to it. Draw up the corners of the muslin and join together. Tie with a long piece of string and attach to the ceiling (if you can). Place a bowl underneath to catch the drips and leave for 3-4 hours.
The essence is heavenly. Serve in shot glasses with a parmesan crisp. Its also delicious for breakfast as an energy shop and is so healthy.
And the leftovers of chopped tomato mix? Put in bags in the freezer and use to make lovely pasta sauces.
