Hi, I'm trying to find instructions on how to undo the pipe that comes out of the back of the loo and bends down into the floor. The pictures of toilets see on the internet are different, mine is simply as I described, not enclosed or anything more bendy. I'd like a link to a webpage or youtube page with simple instructions please.

All the soil pipe fittings that I've ever come across, and I have worked with quite a few, are all push fit. All the fittings have a gasket inside which seals it.
If you have a 90 degree bend from the ground to the back of your loo, and you want to disconnect it, it probably means unscrewing your loo from the floor and moving it forward.

The problem worsened enough to not risk it. I will watch what the plumber does.

All mine's cast iron. I live in fear of the day it starts to leak...
