anyone have a suggestion for a particularly good - newbie, from the basics sausage/salami making book? particularly interested in smoked ones that keep for ages without freezing.

I found a book called "Charcuterie", by Michael Ruhlman, its pretty good.

I notice that most English based sausage recipe books insist that for wet sausages you always need some form of rusk - usually breadcrumbs pop up - rusk to absorb fat and flavour. But I have a bunch of French sausage recipes here and I note not a single one of them uses any form of rusk - although they do tend to use many veggies (but not of the flavour/fat absorbing kind, if you know what I mean). Has anyone ever made sausages without using rusk?

I have "The Great Book of Sausages" ISBN 0-87951-682-8 and it gives you 45 recipe's and 600 varieties from around the world and how to cook them and what to eat with them. :salute:

If you have ever eaten cheap supermarket sausages then don't look at this little video, the Mrs and myself made the decision to never but anything below 80% meat ever again after watching the whole program.

If you can read Italian I've a good book, and if you like a slightly spicier sausage, here's a nice Calabrian recipe passed on by a friend.

Sopressatta

5 lb. Pork 80% lean
5 tsp. Salt
2 Tbs. Paprika, sweet
3 1/2 tsp Cayenne, ground
1 tsp. Cure (freeze dried starter culture for making salami and other cured sausage products)
1 1/2 tsp. Garlic, dry, granulated
2 tsp. Pepper, black, ground
45 mm intestine casings

Directions:
1. Lean pork trimmings (from the shoulder, fillet, ham) are cut by hand (or ground)
2. Mix meat with salt, cure and spices.
3. Stuff the mixture into large intestine casings and tie into 5 inch links
4. Air dry the sausage for 4 weeks under weights so it turns nice and compact at 60°F [15.5°C] at 60% R/H
5. Store in big barrels of vegetable oil.
6. Sausage will keep up to year and a half year this way.
