Tonight I cooked a vegetarian shepherd's pie, which is the best thing that I have had in a long time.

2 onions, 2 celery sticks, 3 carrots, 2 garlic cloves (fry gently til soft)

Add 1 x 400g chopped toms, 100g red lentils, 2 tbs tom puree, 425 veg stock (simmer for 20 mins)

Add layer of mashed potato and grated cheese, bake in oven 30 mins.

I had to have two portions, so please book me on the weightwatchers course as well !!!!! :roll:

Squash patty with the last of my butternuts from last year (they did fantastically well and I'm sure they would have stored for a lot longer if I had not eaten them all!).

Halve a butternut and roast in foil, scoop out the flesh and mix with chopped onions, garlic, egg and anything else you want to throw in.

Fry as small patties.

Yumyum.

Cauliflower Cheese.

Not had this for years but almost tripped over some local grown organic Cauliflowers in the green grocers so bought two small ones and some local organic Cheddar... all topped off with some organic Parmigiano-Reggiano and baked until golden and bubbling.

It was absolutely amazing if I do say so myself, I think OH thought he'd died and gone to heaven (he's a cheese-o-holic :wink: )

I must admit I thought it was one of your 52 recipes but obviously not. I made it recently under the name Old Fashioned Teabread and was told I had in fact made Bara Birth (which I think sounds much nicer!)

And it is scrummy ...... should I really have had 2 pieces though :oops: ?
