Man eating biscuits
Does anyone have a simple recipe for fairly quick to make biscuits? My partner and I are really trying to whittle down our food shop but biscuits are proving to be troublesome. He always eats about 8 a day and I just can't seem to make them fast enough...
I'm not after advice on how to stop him being such a greedy pig and I promise I do feed him well and it's not that he's starving or anything. I'd just really like some recipe ideas.

peanut butter cookies...
50g butter
2 tbsp peanut butter
2 tbsp caster sugar
8 tbsp plain flour
1 egg yolk
dash of vanilla optional (I've sometimes used vanilla infused sugar)
mix all together (bash about a bit with a wooden spoon) to form a dough - then form into biscuits however you want - I just pinch off bite sized pieces, roll into a ball then flatten slightly with a fork - then bake for 10 mins at 180 C
Voila! You've got a batch of biscuits in 15-ish minutes - and they're nice and melty and yummy and salty sweet...

ROFL, that's what I thought too....
Must admit, I tried to make digestive biscuits last week. I must have spent 2 hours (that I will NEVER get back) and far more money on turning the oven on than the 32p we pay for them in, erm, a leading Supermarket.They were absolutely revolting and rock hard. If anyone is thinking of building an extension, I think they would make excellent foundations. I also made flapjacks hard enough to break teeth.....
I used to make nice cookies, but tried to make some of them recently and they went horribly wrong, just flat and hard. God knows what I did.
Have given up on biscuits for the time being....................

Thanks for the recipes Mullein and Number6. I'm going to try them both today and see how we get on.
I personally love the Bon Maman pecan and maple galettes but they're way too expensive unless on special offer. Maybe if I get some biscuit skills I'll be able to work out how to make them.

I've made these twice and they are fab. The first time I added ginger to the cinammon and the 2nd time just 2 tsp of ginger, which was nicer. I also add chopped walnuts. I don't add vanilla.
You can change the recipe to metric and be warned that the 24 American cookies it says it makes actually makes about 36 what I consider to be large cookies! Yum, still have some in the freezer.

My boyfriend is by nature, a greedy pig. It was not unknown, before we moved in together, for him to lie in bed and scoff an entire packet of custard cremes in the hour it takes to watch an episode of '24'.
So I have done well to turn him into the wood chopping/veg growing/chook rearing eco-hero that he is today. However, if I make anything nice, it is gone in an evening. I have taken to making half the quantity but make 6 large biccies. He tends to only have two or three of these...meaning I get a look in and a crumb if I'm lucky!

Here is a very quick and easy recipe for Garibaldi biscuits, where you can substitute raisins for any dried fruit or nuts you have to hand instead.

This is from the news Hairy Bikers book, just made a batch.
Yummy Biscuits
100g Room Temp Butter
100g Caster Sugar
200g SRF
1 tablespoon Golden Syrup.
Cream butter and sugar, add flour and syrup.
Roll into balls.
Place on greased baking tray, flatten slightly
6-10mins. 190c until golden.

A recipe I was really keen on when I was vegan was a peanut butter and chocolate chip recipe... Best of all is that it uses no flour! So when you've run out of flour, you can still have cookies, which imo is always a good thing!
As I recall it was just a cup of sugar, a cup of peanut butter, one mashed banana, a teaspoon of baking soda and maybe some vanilla? Oh! And a cup of chocolate chips. Mix it all together, drop it in tablespoons onto a cookie sheet and bake for about 10 minutes, but like all cookies take them out while they are still soft - if they're hard in the oven they're awful when cool! They are yum and pretty easy!
