What else can I do with duck?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

We had roast duck for lunch yesterday and of course there's some left. So what can I do with the left overs?

Kung Po (is that the right spelling?) Anyway, chinese, very hot and spicy, saucy, stir fry type dish.... hmmmmmm.... I'm hungry...

I second Annpan with the oriental suggestion

Shred it up and stir fry it spring onions and the sauce of your choice, serve with noodles

Or you could make duck spring rolls?

Don't waste the carcass- boil it with some chilli, ginger, spring onions etc and you'll have the base of a fabulous noodle soup.
You're going home in a combine harvester

Thank you guys - you are an inspiration! The carcass is now in the slow cooker with some ginger, galic and onion and the left over duck is happily marinading in toasted sesame oil, garlic and chilli sauce, dark soy sauce, young ginger slices and sliced pickled leeks. I quite amazed at the wierd and wonderful stuff I keep in my cupboards! Later I'm going to stir fry it with the beanshoots that I've sprouted in the cutlery drawer and other veg - to serve up with noodles! Yuummmm!
