Recipe for lemon balm wine

I had a lovely recipe for lemon balm wine last year but appear to have mislaid it :oops:, seeing as my lemon balm is going great guns I wondered if anyone had a recipe that they would be prepared to share? I have done an ish search but it isn't coming up. Would be grateful :sunny:

I have a very vigorous lemon balm weed/plant... never occurred to me that it would be good for winemaking - so how good is the final product?

I hear its very nice which is why I'm going to give it a go seeing as I have oodles of the stuff :lol: however, it is also good roasted with chicken and it makes a lovely tea.
