I made courgette Rosti the other day (with 1/2 a potato and an onion to slightly honour the original recipe). Really salted and squeezed well - SO much water came out, but even without flour they managed to stick together just using beaten egg. Makes all the difference having the food processor though - grating takes seconds and I think because the 'gratings' are smaller, more water comes out.

Sorry - off topic. Wasn't half tasty though with a poached egg on top!
