I always use lemon juice and crab apples to help acheive a good pectin level with elderberries, give it a bash next time.
The cordial however, is delicious.

Lovely recipe thanks.
I made some mashed potato mixed with a little grated cheese and coriander and added this to it and filled jacket spuds with them, absolutely fantastic - thankyou xx

We have had our step grandkids staying with us for the past fortnight and they are totally plug it in and play in front of the t.v children(boy did we have news for them!!!) Thanks for that info kate, if you don't hear from the hague clan, you can safely assume i've not cooked them properly.
I have vague recollections of my nan making rowan jelly before and we also survived that, will keep everyone posted lol

I have two books with differing advice on the use of rowan berries, one says that it is fine to use them with crab apples in a jelly, but the other warns that they can be fatal, all advice gratefully received.
