When I said overproof I was meaning something like spirytus at 90-95%abv, and using a flavourless wine of 10-15%abv to bring it down to 40% (cant find a calculator that will do it, and don't have the time to remember my pearson square). Never done it with horseraddish, but I've made both chilli vodka and black pepper vodka. As with GA, Chilli vodka isn't my favourite tipple (can be useful to add a dash to other flavoured vodkas for an interesting twist though). Yeah, the "tester" pint had cordial added to it once I realised it had no flavour of its own. I wasn't about to pour away the stuff I've made, I just won't repeat the experiment until I'm back home and am not trying to ferment quickly, and then I may play "how little honey can make me...

Update on the mead, just bottled it, it fermented dry (1.000 once I degassed the sample), giving about 3.9% abv. It is nearly flavourless, and certainly doesn't taste like mead. Either the honey was just rubbish, or there wouldn't be enough honey for decent mead no matter the quality. Probably just ...

I find mead tends to stay sweet, as a guess there are non-fermentable sugars in there somewhere. This is a test of concept as much as anything. Yeah, plenty of dandelions here too, but as I say the only bit of kit I have is the one "demijohn", so I don't have kit to strain wine off the petals. I'm also brewing with speed in mind - I want something that'll save me paying for my booze quickly, and wine takes longer than turbocider. ...

I love pasta with garlic and oil, it's a lazy lunch if I'm hungry, just never thought it substantial enough for tea. May have to try the blitzed veg sauce, if there is a blender here. Same here too. If anything it's just given me more time to study, which is no bad thing. Between study and my housemate giving me jobs I've not even got out for walking as much as hoped, that may have to be remedied at some point
