I remember seeing Sophie Grigson doing an amazing carrot and garlic chutney. 5lbs carrots, grated 5lbs sugar 7 whole heads of garlic, separated into cloves, and peeled but not crushed. Chop up some mint, pour hot water over it, add a dash of lemon juice and a spoon of honey. Stick it in the fridge. Serve cold. Enormously refreshing on a hot day.
