Ciderish question

We're about to start making Cider-ish from the recipe on the main site... 
Quick questions:
1) Should we cover the brewers bucket with something - muslin/tea towel etc?
2) Once bottled, does it have to be in bottles with screw lids (thats how I read the recipe)
2a) If so, aren't the lids metal - and the recipe says no metal (or doesn't it matter by that stage?)
