Alexander has any one tried making a wine from it
i made beer from it last year use the nettle beer recipe and was very good
if so one got a recipe

I have a recipe for Celery wine which I guess could be adapted for Alexanders which have a similar flavour.
Celery 4lb/1.8kg
Sugar 3lbs/1.4kg
Lemons 2
Water 1 gallon/4.5lt
Wine yeast
Yeast nutrient
Camden Tablet
Wash and chop the Celery discarding any discoloured parts. Place chopped herb into 1 gal/4.5lt boiling water. Simmer until tender then strain the liquid off and over the sugar (in another vessel) dissolving it thoroughly.
Leave the liquid until tepid, add the yeast, nutrient and juice of the lemons.
Cover and ferment for 4 days, stirring twice daily. Transfer to a demijohn, close with a bung and airlock and ferment on. Rack it (Siphon it off the sediment) once it starts to clear.
Once all fermentation has ceased, Add a Crushed camden tablet, bottle and store it in a cool dark place. Mature it at least 6 months before drinking it.

I made an alexander and knotweed wine and it turned out pretty well. Used the same recipe as below but 2lbs of knotweed and alexanders.

racked it off last night and i tastes pretty ok
should be good given a bit more time

You racked it after six days? Had it stopped fermenting?
