Pearl barley-wine

Ingredients: To make 1 gallon.
pearl barley-1 1/2 lb (680gm) or flaked barley.
potatoes-1lb (454gm)
Raisins-1lb (454gm)
Sugar-2lb (907gm) you can use half Brown sugar to taste,optional.
water
Tea, strong-1/2 cup ( No milk )
Lemons-3
1TSP-GP yeast compound
Marmite-1/4 tsp (optional)

Method:put the barley in the fermenting bin. peel and dice potatoes, Discard peel and any green parts and add to FB,add Raisins after rinsing in warm water and chopping or mincing. cover. then warm 1 pint (1/2 lt) of water in a pan and dissolve your sugar and marmite allow to cool then add to FB with the cold Tea (no leaves or bag),Extract juice from the lemons. Discard pips pith and peel. add lemon juice and water to cover the ingredients, and add GP yeast compound and cover FB.
leave in a warm place for 10 days. stir twice daily.
After 10 days strain and press the Raisins & barley,add the juice to a Demijohn top up with water,and
fit airlock and fully ferment out. then rack and mature for at least 12 months. :thumbright:

This sounds like the recipe my Dad used to make - called Poor Man's Brandy!

Ooh, just seen you're from Ashton - I lived there for 20 years, only moved up here in 2007 :iconbiggrin:

If you read Andy's new Booze for free book, i believe you will find a recipe for carrot whiskey similar to this in there.
