				wine with mould

				Hi,
I've 3 demijohns of elderberry wine ready to rack, and one of them has something floating on top which could well be mould. It doesn't smell too bad. Has it had it or is it rescuable please?

				I think mould is only a surface thing, so it hould be OK.  Add some campden tablets or metabisulphite to sterilise it as you rack it off  if you want to make sure.

				Dave's spot on. The tablets/metabisulphite go in the demijohn you're racking into - not the one with the mould (although it's unlikely to be a mould).

				It could be a sherry flor if you are very lucky - ive had it occur spontaniously once in 10 years of brewing. exceptional!

				Excellent, thankyou very much all of you, will rack it then with the rest, and keep my fingers crossed! Very relieved, as that's the one with the most elderberries in...
