Butter free cakes

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Does anyone have any recipes for cakes without butter, and preferably ones that can be cooked in the microwave?

I tried looking on google, and i remember something about using bananas instead for some vegan cakes, but i can't find any recipes!

Does it have to be vegan? If it´s just butter-free, then I´m pretty sure I have something with eggs, flour and sugar, an italian recipe, that I usually drizzle with lemon syrup :thumbright:

That sounds good!

I can get eggs, flour, sugar, milk etc, but not butter, cream or cheese.

Vegan is not essential, i just vaguely remember something about bananas being used as a substitute.

What about a swiss roll? There's no fat in a swiss roll and it's not replaced with anything, just whisk 3 eggs with 3oz of sugar and stir in 3 oz of flour. You can cook it in a more usual cake shape if you don't want to roll it.

I think in vegan cakes the bananas usually replace the eggs rather than the butter (you use margarine instead of butter.) I'd go with a sponge like Julysea's swiss roll. Also I think sometimes you can make cakes with veg/ olive oil instead of butter - can you get those?

Lots of cake recipes use sunflower oil instead of butter. I make lemon/orange yoghurt cake quite often - can you get yoghurt? I don't know if anything can be substituted for the yoghurt though! Carrot cake uses olive oil.

I can get all kinds of vegetable oil, and i can get long life yoghurt. All the milk and yoghurt is long life.

Aaah...eggs! I knew bananas were a substitute for something!

Can i make swiss roll sponge in the microwave? I found a jar of strawberry jam the other day, so that could be promising!! (its really strange how the supermarkets have the odd jar of jam or peanut butter, but then they never seem to replace them when they're gone!)

You can also use silken tofu in place of eggs, or ground linseeds.

I've got loads of vegan cake recipes but admit to being totally unaware of how they'd cook in a microwave :dontknow:
