ginger cordial that keeps well?

I would like to make some ginger cordial for my dad but the recipes I've found such as this one:

1 lemon
2 cups sugar
1 piece (3 inches) ginger, peeled and chopped
2 teaspoons cream of tartar
1 cup freshly squeezed lemon juice

say they it will only keep for 10 days - 2 weeks. He wouldn't make it through much in that time, so I'm wondering if anyone knows if you can make ginger cordial that lasts longer. Maybe by leaving the lemon juice out?
I don't understand why other cordials can keep so much longer.
Any help would be appreciated, Jill

id love to know how to make a great ginger cordial too!

i thought lemon juice acted as a preservative? so taking it out would make it last only a few days rather than a few weeks.

I think they are saying that it will Keep for 2 weeks, just to be safe.

I would think if properly cooked and stored in a sterilized bottle this cordial should last for months in the fridge. However, if it bubbles or looks odd, throw it out.

Yes, crowsashes, I thinks you're right. Was just clutching at straws really.

Minnesota, I think this is the best attitude. Don't know what's got into me ... normally have the attention to detail of a rhino ...
... think it must be lunar influence :fucyc:
