Gin tastes of rubber!?

Hi everyone,
I very excitedly opened my gallon of sloe gin that I lovingly swished around in its demi-john once a week since september, only to find that it had a distinctly rubbery flavour.
What is sloe gin meant to tast like? I am guessing not rubber!
Is there anything I can do to improve the flavor?

did you use a new rubber bung for a stopper?

I was just going to set about making blackberry vodka in a glass bottle with a rubber stopper.
Do you think the rubber stopper is the problem?

they can leave a taint unfortunately - if its an old bung it should be ok. if its new and smells of rubber... put it in a pan with water, simmer gently, and then check the smell again.

try adding activated charcoal such as you buy to use in filters. it may vaccume up some of the nasty compounds, dont know if it will affect the sloeeness (tm)! of the gin, but with luck for around $5 you could have something drinkable again

We don't make sloe gin in a demijohn. I have a big glass vase that we put everything in, then just cover it with a teatowel. Works just fine.

i make it in jam jars
oh and i use vodka rather than gin.. not that keen on gin
