Rose petal cordial

				I used Andys recipe for elder flower cordial but used rose petals instead.
About 40 or more flower heads, petals only - I used rosa rogosa as that's what was growing round here!
3 1/2 lb sugar
1 lemon - sliced
2 tsp citric acid
2 1/2 pints boiling water
Grind up the flower petals - I just used my blender and put into a container with all the other ingredients and stir until the sugar is dissolved. Let it all steep for about 5 days - stirring twice a day. Strain and pur into sterilised bottles. Keep in the fridge. It makes a lovely colourful, gently flavoured cordial.
