For 500g of flour use a 7g envelope of dry yeast or 20 g of fresh yeast. Fresh yeast should keep for a month or so in the fridge in something airtight or if they've given you loads you can keep it in the freezer, just defrost a chunk every time you want to use it.

Anyone know how you get fresh yeast to grow? Apart from making it eat its greens

easy, crumble into room temperature water with sugar in. Leave somewhere darkish. If you need to cover the jar/bowl/whatever use a clean tea towel.
Want to make it go mad? Just add some yeast nutrients - it turbocharges it.
