Sowing grass seed

We have large areas of ground that will need to have grass seed sown. The expensive bags of grass seed have been eaten by rodents (that's what happens if you leave what is essentially winter rodent food in paper bags in a rodent infested barn over winter!!).
So my partner had a good money saving idea. How about cutting off the seed heads from the long grass we're about to level and dry it and use those seeds for sowing in selected areas, rather then let them blow all over my veggie beds and set seed.
Does anybody have any useful tips please? best way to store the grass tops until we need the seeds? etc
