what is patatas bravas?
Fried potato cubes in a spicy tomato sauce. A bit too hot for my tastes but if you fancy it then the Waitrose site has a recipe:

39. Smashed - parboil small whole potatoes, take out and whack with rolling pin to split skins. Sautee in a little olive oil, drizzling some sweetened red wine over a few minutes before serving.

40. Pepitos - very small potatoes (sometimes known as chats) parboiled. While draining, heat up a little olive oil in big saucepan until beginning to smoke then reduce heat a bit. Throw in potatoes, sea salt, tomato puree, crushed garlic, and chili powder to taste. Slap lid on before overcome by fumes. Evacuate kitchen and open all doors, then turn off smoke alarms. Shake pan well and check now and again until browned. Should be spicy enough to wake people up! My son calls these HEAPs - High Explosive Armour Piercing Potatoes!

Discovered this in Egypt, whilst working there several years ago. My friend didn't speak enough English to tell me the recipe so she cooked it for me, whilst I watched & made notes...

Peel & slice spuds into a pan, add sliced onion, sliced tomatoes, stock cube, chunk of butter/ marg., cover with water & simmer 'til spuds are cooked. Some kind of spice, I use paprika, peps it up well.

Very small new potatoes, boiled not too soft, browned off in butter

Halved new potatoes, put on oiled baking tray cut side down, brush with more oil, sprinkle woth salt and caraway seeds and bake in oven

Potato pizza: replace pizza base with grated potatoes (bake base without topping first - it needs quite a bit longer than a normal base)
