I want to make some Turkish delight for the hubbys Yule gift and i wondered if anyone has had any experience with making it. My efforts with sweetie making always end up as a disaster.

This is the recipe I was thinking of trying

Never made turkish delight (I'm not even sure what it is, it doesn't exist in the US), but I can share a tip from making other kinds of candy. Use a pan with the thickest bottom you can find (I've found frying pans usually work well), use low heat settings and let it take as long as it wants to.

The best batch of cashew brittle I ever made took almost 8 hours. The burner was set so it was just barely bubbling, and the candy developed this wonderful, rich flavor without ever even thinking of scorching.

i make this all the time in work and always comes out well

TURKISH DELIGHT

1 LITRES WATER
250mls ROSE WATER
500gms SUGAR

BOIL TOGETHER

250gms CORN FLOUR
250mls WATER
1500gms SUGAR

1. MIX TOGETHER WATER AND CORN FLOUR
2. WHISK SLOWLY INTO BOILING ROSE SYRUP
3. COOK OUT 15 MIN STIRING ALL THE TIME OVER LOW HEAT
4. WHISK IN SUGAR BIT AT A TIME COOK 5 MINS STIRING ALL THE TIME

55gms GELETINE

SOAKED GELITINE IN COLD WATER
ADD TO MIX
POUR INTO TRAYS
